So the vegan rolled royal icing was a sucess and the taste was good as well. In the first test batch there were a couple of things. You had to work pretty fast and only one cookie at a time as the icing dried very very hard and I think I need to add something to the rolled royal icing to give it more elasticity. #vegan #veganfood #baking #halloween

Is anyone here a gluten-free baker?

I want to make bread pudding, and I wondered if there were any pointers I should know about? I know you have to soak the bread cubes for at least an hour in the milk and egg mixture before baking, because it's so hard to get gluten-free bread soaked through (learned that from French Toast). Thinking about using Eggbeater's (liquid egg whites in a carton) in place of some or all of the whole eggs. I've got some caramelized apples that I want to fold in as well.

For the uninitiated, bread pudding is a popular dessert in New Orleans.

Think I have to give up on wild yeast bread for the time being.

Making bread with yeast water has served me well for many years, since midway through 2020 (when I started using it for mysterious reasons). But lately, it's been failing on me too many times to ignore.

I can't figure out *why*it's failing to rise sufficiently, and at this point I'm not inclined to waste time, effort and flour to figure it out. It's a shame, but I think I have to move on.

RLB's buttery dinner rolls from The Bread Bible.

Have made these many times, in a few variations (including her Parker House and Clover variations included in the book)... I don't think I've ever had them turn out less than great. #Baking #Bread

I am baking cookies today. I went outside so I set a timer on my phone. Incorrectly! By the time I figured this out the time was about 10 minutes past the 13 they should be in there for! A burned cookie calamity was only avoided because apparently I forgot to put the cookies in the oven in the first place. 🙄

I kind of like watching the older America Test Kitchen episodes more so now then I did when they first aired. It's the outdated kitchen decor that doesn't scream boring like it did to me the first time around.

Decor: I'd say 1980s early 1990s?

Pecan-colored cabinets
Red brick-accent wall.
Lotsa butcher's block
Cornucopia-esque decor

Now, to be clear, I wouldn't want that decor back now though.

Well, I won’t say that the most ROUSING culinary success I’ve had (I struggled with the cake pans where the bottoms pop out leaking a bit), but I have a back up marbled banana bread in the oven, and ganache will cover a multitude of sins. #baking

Dinner rolls to go with the pot roast Husband has going for tonight's meal. I think I nailed these. Finally. Photo is a 9x13 pan of dinner rolls- melted honey butter making them look shiny. There's a healthy pinch of flaky salt on top, too. Sweet/salty. Delicious. Unfortunately glutenous. #food #baking #bread

see how the edges are curling here? that’s the dough trying to return to previous form. and if you try to roll these into squares - the next step - it absolutely doesn’t work, they go instantly back to rectangles that want to curl back into a roll.

Okay, no, it's failed.

It's made too much gluten. Once you get it off the surface it contracts immediately back to previous shape and absolutely nothing will hold it down other than glue. I've formed some half-assed croissant-shaped objects, but it's over.

So what I learned today is that this cannot be spread over two nights.
